Irish Stew

A unique design from my lino cut recipe series; each tile is an ingredient, that when tessellated together, form the recipe for a delicious Irish Stew; Lamb, onions, carrots, potatoes, stock, bay leaves, thyme, bouquet garni, olive oil and spring onion to garnish. 
Also depicted is the iconic Dunluce Castle on the Antrim coast in Northern Ireland.

Roughly chop lamb, place in a saucepan and cover with stock; simmer for 30 minutes. Add diced floury potatoes, carrots and onions; simmer for another 30 mins or until vegetables are soft.
Add waxy potatoes and thyme; simmer for 20 minutes

Longer cooking times will enrich the taste and texture of the stew; it will taste even better the next day.  
Garnish with parsley and finely chopped spring onion 

Serve with a large chunk of crusty bread
